A note from Dan
Well, it was a long one, but it looks like winter is officially over – according to both the calendar and the sunshine!
During the coldest weeks, my wife Charo and I enjoyed lots of homemade soups and stews, made with our local winter veggies. While it was a different winter – one with perhaps more snow than rain – it was a welcome change for us and our crops. The limited rainfall was helpful to our strawberry and raspberry crops. Sometimes, too much rain can saturate the berries’ roots, but this year, our berries are sure to thrive. There are only a few more months until strawberry season! In the meantime, you can stock up on our frozen berries for your breakfast smoothie or an after dinner treat (they’re wonderful with yogurt or homemade cookies).
Be sure to keep a lookout for future emails and newsletters. We’re planning an exciting open house event for May and will be sending more details in the weeks to come.
Happy Spring!  We look forward to seeing you soon.

Easter orders!
The chickens are arriving April 9th.  Our chickens are organic and hormone free and come from a farm in the Cowichan Valley. Please feel free to call and order your chickens in advance. Chickens will continue to be available for the rest of April and the first few weeks of May.

Eat fresh, buy local
We hope you are enjoying the last of our winter fruit and vegetables. We are still carrying our own Northern Spy, Fuji, Melrose and Spartan apples, as well as other BC varieties. If you have a craving for homemade squash soup, come by and pick up our own Hubbard, Stripetti or Acorn squash today. We are supplementing with other local varieties as well.
Need your greens? We are also bringing in local, unsprayed lettuce, bok choy and swiss chard.
Our own apple juice and frozen raspberries are also available year-round.

What’s cookin’ in the bakery...
Looking for bread that tastes homemade without having to do the work? Try our new sourdough, multigrain and white breads. They go well with our homemade jams and Babe’s honey too! Please call in advance to place your bread orders; preserves are always available.

Calling all local artisans!
We need your help. We're currently looking to expand the gift section of our store and are keen on carrying locally made art, crafts and other gifts. We would love to hear your ideas and encourage you to ask any friends or family who make beautiful products. Please call us at 250-652-9100 or send us an email at dansfarms@shaw.ca

Mmmm...ice cream!

Did someone say ice cream? The warmer weather has arrived, and the ice cream is on its way. Watch for our ice cream stand coming in April.

Ingredients:
• 2 cups ( 500 mL) whole wheat pastry flour or whole wheat flour
• 1 tbsp ( 15 mL) baking powder
• 1 tsp ( 5 mL) ground cardamom and cinnamon
• 1/2 tsp ( 2 mL) sea salt
• 1 cup ( 250 mL) liquid honey
• 1/2 cup ( 125 mL) canola oil
• 3 eggs
• 1/4 cup ( 50 mL) milk
• 1 tsp ( 5 mL) vanilla
• 2 carrots, grated

Directions:
1. Preheat oven to 375 F (190 C). Grease a 9x13-inch (3.5-L) pan. In a large bowl, stir flour with baking powder, cardamom, cinnamon and salt.
2. In a medium bowl, beat honey with oil. Beat in eggs one at a time. Add milk and vanilla, and stir in carrots. Pour over dry ingredients and stir until combined. Pour into greased pan. Bake for 30 minutes or until golden brown and a cake tester inserted into centre comes out clean. Cool completely before frosting.
